My husband and I have really enjoyed the diversity and creativity of these recipes! It helped us put some "zing" into our old favorites and experiment with new and different vegetable dishes. At our age, he's almost 50 and I'm 40, we want and need the maximum benefit from our workouts and meals. This book certainly helped with the "eats" portion of that equation. This book contains many healthful recipes, some of them interesting, some pedestrian. I like that at the bottom of each page the authors list the calories, protein, and fat in each recipe, plus the percentage of calories from fat, plus dietary fiber and calcium. The book is 400 pages long, and each page has one or two recipes. All in all, it's a bit difficult to choose a recipe because there are simply so many of them. I realize that this is personal preference: some readers and cooks may prefer wall-to-wall recipes.But if you're a vegetarian, or simply trying to bring more vegetables into your daily diet, this is a good book to consult.
